Unripe or over-ripe produce may not last long in storage, if not picked at proper maturity stage. Therefore, harvesting needs to be done at the right stage. The produce is handled gently to avoid bruises and mechanical damage which result in easy access to decay organisms. Crops which are destined for storage are kept as free as possible from skin breaks, bruises, spots, rot, decay and other deteriorations.
